TO MAKE

If the party is coming to you, make a meal that is part finger food, part comfort food, and wholly delicious.  We love easy-to-make pizzas like this recipe from our friends at Parenting. The white and green pizza, (and red and white pizza) still look good with those Christmas decorations that you’ll get around to taking down after the ball drops!

Prep time: 5 minutes
Cook time: 2 minutes
Bake time: 10 minutes
Yield: 4 servings

What You’ll Need:

  • 5 oz fresh (or frozen, defrosted) baby spinach
  • Salt and pepper to taste
  • 2 Tbs water
  • 1 cup part-skim ricotta
  • 1/2 tsp garlic powder
  • 2 mini-pizza crusts (found at your local grocery store)
  • 1/2 cup shredded reduced-fat mozzarella
  • 2 Tbs grated parmesan
  • 1 Tbs olive oil

What You’ll Do:

  1. Heat oven to 450 degrees. Put spinach in a microwave-proof casserole dish. Season to taste, and sprinkle with water. Cover with plastic wrap, and pierce to vent. Cook on high for two minutes. Drain cooked spinach well.2. Mix ricotta and garlic powder in a small bowl. Place the pizza crusts on an ungreased baking sheet. Spread half the ricotta mixture on each pizza crust. Top each pizza with cooked spinach, mozzarella and parmesan. Drizzle with olive oil.

    3. Bake for 10 minutes, or until the cheese is melted. Cool slightly and cut each pizza in half to serve.

Editor’s Note: Substitute the ricotta with red sauce and the spinach for basil. Voila… margherita pizza!

 

TO TAKE

Bring something simple, yet satisfying to that NYE party! The Fiesta Salad says it all and this recipe from our friends at Parents Magazine has it all. It’s chocked full of flavor and color. Healthy ✔️ Fun ✔️ Festive ✔️

What You’ll Need:

  • 2 cups chopped romaine lettuce
  • 1 cup black beans (rinsed and dried)
  • 1/2 cup of medium baked or microwaved sweet potato
  • 1/3 cup diced tomato
  • 1/4 cup thawed corn kernels (thawed if using frozen)
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon chopped garlic
  • Salt and pepper
  • 1/4 cup shredded Mexican blend cheese

What You’ll Do:

In a bowl add the chopped romaine lettuce with the black beans, diced sweet potatoes, tomatoes and corn. (You can keep the skin on the sweet potatoes when making them into cubes.) Then, make a lime vinaigrette with the lime juice, olive oil, garlic, plus salt and pepper to taste. Mix those together and drizzle over veggies and beans. Stir everything together; sprinkle the shredded cheese on top.

 

BONUS: TO DRINK

Last, but certainly not least, wash it all down with New Year’s Eve’s signature drink: champagne! Of course, we mean without alcohol, but still with bubbly taste! Our friends at Baby Center have provided the recipe below.

What You’ll Need:

  • 2/3 cup sugar
  • 2/3 cup water
  • 1 cup grapefruit juice
  • 1/2 cup orange juice
  • 3 tablespoons grenadine syrup
  • 28 ounces chilled ginger ale (about 2 1/3 soda cans)

What You’ll Do:

Combine sugar and water in a saucepan over low heat. Stir until sugar is dissolved. Bring to boil and boil 10 minutes. Cool. Add sugar syrup to grapefruit and orange juices. Chill thoroughly. Add grenadine and ginger ale just before serving. Makes about 1½ quarts.
